Tuesday, March 10th: Indian Plant-Based Cooking
Last month’s curry class filled up quickly, so we have come up with another
Indian cooking class for this month. Main dishes will be South Indian Style Lentils
with Vegetables and Sweet & Sour Vegetables with Tofu . Side dishes will be
Bombay Style Potatoes, Shredded Cabbage with Cumin, Tarka Dal and Indian

fabulous Indian meal! $40. Vegan.
Tuesday, March 17th: Everyday Mediterranean Pt 1
Everyday Mediterranean is one of my favorite cookbooks from chef/author
Michael Psilakis. In part 1, we will make dishes that use Greek Yogurt, Garlic Confit,
and Tomato Sauce. On the menu are Greek Turkey Burgers, Spicy Roasted
Salmon, “Spanakopita’ Baked Filet of Sole, Whole Wheat Penne with Spinach, and
Cinnamon Scented Cauliflower. $40
Tuesday, March 24: Italian Breads
We recently posed the question of “what kind of baking classes would you like to
do” and the resounding answer was breads ! In this class we will make 3 Italian style
breads and 1 American-Italian: An Italian Loaf Bread , crunchy on the outside and soft
on the inside, A Ciabatta loaf for making your favorite sandwiches and finally, a
Focaccia , loaded with savory flavors. For the American-Italian, we will make Olive
Garden Copycat Breadsticks. Why not?! $40.
Tuesday, March 31: Vegan for Meat Lovers
For those of you who don’t know, our friend and daily customer, Randy Theis,
has lost over 100 pounds in the past year. He accomplished this amazing feat by
following the Ornish Diet, which is a very strict diet for those who need to reverse heart
damage. Randy also happens to be a very good cook, and he has graciously accepted
my invitation to teach a vegan class for meat lovers. On the menu: Mexican Stuffed
Peppers, BBQ Jackfruit Sliders with Slaw, Rice & Bean Power Bowl, and Smoky
Bean Tacos. He will also teach us how to make some healthy appetizers - Hearts of Palm “Crab”
Dip, Fresh Corn Salsa with Homemade chips and Apple Spice Muffins for dessert. $40
