Tuesday, June 4: Shrimp Around the World-SOLD OUT

Wednesday, June 5: Shrimp Around the World

Tuesday’s class is sold out, so we decided to try to fill another class on
Wednesday. On the menu is Low Country Shrimp and Grits, Shrimp with Feta &
Tomatoes from the Greek Island of Santorini, Italian Shrimp Fra Diavolo, Moroccan
Shrimp with Couscous and Indian style Shrimp with Cauliflower. Travel the world in one
night! $40.

Tuesday, June 11: New Age Greek II

The Mediterranean Diet is all the rage these days and with good reason. Fresh,
healthy food, loaded with veggies and light on the meat. In this class, we will make
sauteed dates stuffed with toasted almonds. The perfect salty/sweet appetizer. We will
also make Pappoutsakia (literally “little shoes”) that are stuffed eggplants and zucchinis.
Main dishes are chicken “Kapama”, a lemony stewed chicken and artichoke dish, and
herbed lamb parcels wrapped in phyllo dough. For dessert, Greek Apple Tart. Living
healthy never tasted this good! $40

Tuesday, June 18: Croatia

Some of you may know by now, but the Blue Ridge Bakery is going to CROATIA
next summer! We are BEYOND excited about this trip of a lifetime and what better way
to pre-explore a country than by eating its food! So join us as we cook and eat some of
the tastiest foods in Eastern Europe! On the menu: Red Risotto with Shrimp, Cabbage
Roll Soup (tastes just like cabbage rolls but without all the work!), Cheese Strukli (layers
of homemade dough and several cheeses), Soparnik (layers of homemade dough
stuffed with Swiss Chard and herbs) and for dessert, Bahadera Torte (a no-bake
dessert perfect for the summer) $40

Tuesday, June 25: One Pan, High Protein, Dinners

Cooking Dinner on a sheet pan is just as fun as cooking dinner in a single
skillet-No Muss, No Fuss and a lot less dishes to clean. In this class, we will make 5
easy sheet pan dinners, each with at least 30 grams of protein to keep you full through
the night. On the menu: Chicken Teriyaki with Vegetables, Pork Tenderloin with Sweet
Potatoes and Pineapple, Shrimp Fajitas, Crispy Baked Tilapia with Vegetables, and
Maple Mustard Roasted Chicken with Squash and Brussels Sprouts. $40

Tuesday, July 9: Greek Cheeses

 One of the best things about the food in Greece are the cheeses that go with said foods.

Greeks eat more cheese than even the French and in this class, we will make some memorable

dishes with fabulous Greek Cheeses:​Manouri, Eggplant & Orzo Salad, Roasted ​Feta with

Thyme Honey, Grilled ​Halloumi and Minted Zucchini Sandwiches, Thyme & ​Feta ​Lamb,

Halloumi ​ Saganaki and Mixed Greens Pie withCornmeal Crust-a yummy savory pie with ​feta,

manouri, and ​kefalotyri ​ . $40

Tuesday, July 16: 1 Pan Vegetarian, Pt. 1: Supergrains

I just got a new cookbook, and you know what that means….. more cooking classes!

This class is all about easy dinners that you toss on a sheet pan and bake. Less than an hour

later you have a full meal on the table! On the menu: Spiced Roasted Eggplants & Potatoes

with Coconut Basmati Rice, Yogurt & Cilantro, Roasted Mushrooms with Artichokes, Basil &

Israeli Couscous, Bulghur Wheat with Roasted Red Peppers, Tomatoes, Feta & Pine Nuts,

Honey-Roasted Carrots & Parsnips with Quinoa & Arugula, Roasted Eggplant with Squash,

halloumi, Mint & Bulghur Wheat, Cauliflower & Broccoli with Goat Cheese and Hazelnut

Crumble, and for dessert, Roasted Pineapples with Chile Syrup. $40. Vegetarian.

Tuesday, July 23: Greek Summer Foods

My Dad loved to garden and every year, he would grow the things that his family grew in

the Mountains of Greece. Summer eating at home was simple, yet amazing because we ate

everything the day it was picked. In this class, we will revisit the summer foods of my youth,

with a few new touches. Yemista are tomatoes and peppers stuffed with rice and veggies and

baked until soft and sweet, Tomato-cucumber salad served with fresh bread to sop up the

juices, fava dip, Yiayia Kiki’s famous Lima Bean Salad, Greek Horta (Greens) boiled and served

with olive oil and lemon, Roka Salad (arugula is called Roka in Greece) and for dessert, Fresh

fruit drizzled with honey and topped with Crumbled Manouri. $40. Vegetarian

Tuesday, July 30: Greek Dips and Meze (Appetizers)

So I guess this is officially a Month of Greek Food! I can’t help it, in the summer, my

heart is across the Big Pond on a Mediterranean island...ANY island wasorks for me! Let’s do

some island cooking. Greek Style Potato Salad, Fava with Sun-dried Tomatoes & Capers,

Roasted Eggplant and Chickpea Salad, Arugula Salad with Wrinkled Olives and Orange Slices,

Classic Lentil Salad, Potato-Garlic Dip with Walnuts, Roasted Beets with Skordalia,Tomatoes

stuffed with Bulgur and Herbs. $40. Vegan.

If a class fills up quickly, we will gladly repeat the class on Wednesday.
